Here is a modified recipe for Raisin bread that you can make in your breadmaker.
This will make a large loaf about 900g in weight.
330ml Water (room temperature)
7g of Salt
25g of Sugar
40g of Butter / Margarine (room temperature)
500g Strong White Bread Flour
1 & 1/2 teaspoons of Dry fast acting Yeast
120g Seedless Raisins
60g Desiccated Coconut
Add the water, salt, sugar and butter to your breadmaker. Then add the flour over the top to form a flour bed before sprinkling the yeast evenly over all the mixture.
This should be able to run on your breadmaker’s basic setting which should mix the mixture and leave it to partially rise for about 15 – 20 minutes. It is at this point if your bread machine doesn’t alert you, that you should add the raisins and desiccated coconut while the bread machine starts to mix the mixture again.
(For best results, sprinkle the raisins and coconut in rather than just pouring it in in one go.)
When the bread has been baked, leave it to stand for about 1/2 hour before slicing and adding oodles of butter!
